Today I propose a complete, healthy, and tasty dish. Ideal for those who have little time and want to create a mouth-watering lunch with just one dish. The fresh salmon I used has significant nutritional properties, primarily the omega 3 it is rich in. It’s a caloric product, which is why it’s better to enjoy it as part of a complete dish, but it has many vitamins.
I paired it with zucchini and tomatoes, which are very light, and the carbohydrates from the pasta.

- 1 cup zucchini (grated)
- 1/3 cup yellow onion
- 2 tbsps extra virgin olive oil
- 1 1/4 cups diced tomatoes
- 10.5 oz penne rigate
- to taste salt
- to taste pepper
- 650 g water (measured only for Bimby cooking)
- 1/2 cup dry white wine

Buy nice salmon fillets.
Cut them into cubes
Grate the zucchini
Peel the onion.
Chop the onion into small pieces, put it in the pan with the EVO oil and sauté for a few minutes.
Add the salmon cubes, stir, and cook for a moment until it changes color and becomes light, then….
Now you can deglaze with the wine, increase the heat and let the alcohol evaporate.
In the meantime, you can already put the pasta water on the stove.
When the alcohol has evaporated, add the julienned zucchini, stir and…
Pour the tomato sauce,
adjust the salt and pepper to taste and..
Cover with a splash guard and cook for at least 15/20 minutes on moderate heat.

Put the onion in the bowl, cut into pieces and chop for 12 sec. speed 7.
Add the EVO oil and let it flavor for 3 min. speed 1 at 230°F
Put the salmon cubes into the bowl, and cook for 1 min. at 212°F reverse speed 1
Add the shredded julienned zucchini, the wine, a pinch of pepper, and half a teaspoon of salt. Place the basket and cook for 3 min. at 230°F reverse speed 1
Pour the tomato sauce, and with the basket still on, cook for 15 min. at 212°F reverse speed 1.
Now you can put the pasta water to boil
If you decide to cook the pasta in the bowl, remove the sauce and set it aside, and without washing the bowl, put 700 g of water and 1 teaspoon of salt. Bring to a boil at 230°F speed 1.
Add the pasta, close the lid, place the basket, and cook for the time indicated on the package at 212°F reverse speed 1.
At the end, drain the pasta with the help of the basket or a colander.
