Pickled vegetable giardiniera is a traditional recipe from our cuisine enjoyed all year round as an appetizer or side dish, accompanying all types of main courses.

Steps
To prepare the giardiniera, start by washing and thoroughly drying all the vegetables.
Cut the celery into chunks with a knife
Move on to the cauliflower, breaking it into florets. You can use any color.
Leave the cucumber with the skin and cut it into sticks about 3/4 inch long, and finally, chop the onions into coarse pieces.
Cut the peppers into not-too-large strips, and finally, slice the carrots into rounds or sticks as preferred.
You can also cut the peppers into sticks.
Once you’ve finished cleaning and cutting all the vegetables, begin filling the sterilized jars (500 ml), alternating the vegetables as you like, ensuring no empty spaces remain between vegetables. Stop the layer of vegetables about a finger’s width from the top.
In a pot, combine water, vinegar, salt, sugar, and peppercorns.
Boil while stirring until salt and sugar are completely dissolved.
Cover the vegetables with the liquid and seal the jars, always ensuring about 3/4 inch between the lid and the food.
Place a cloth at the bottom of a pot and then position the filled jars.
Fill with water and
cover the jars with the cloth and bring to a boil, leaving them to boil for about 40 minutes.
Let them cool and turn the jars upside down to create a vacuum seal.
Once the jars have cooled, store them in the pantry.
Storage Tips
Pickled vegetable giardiniera can be kept for 3 months, provided that the vacuum seal is successful and the jars are stored in a cool, dry place, away from light and heat sources.
Tips,
It is recommended to wait at least 1 month before consuming the giardiniera. Once opened, each jar should be stored in the refrigerator and consumed within 3-4 days.
