Pickled Vegetable Giardiniera

The pickled vegetable giardiniera is a traditional recipe from our cuisine that is enjoyed all year round as an appetizer or side dish accompanying all types of main courses.
It’s a preserve of mixed pickled vegetables, the more colorful they are, the more visually impactful they become.
The vegetables should be cut into pieces, but in some cases, you can julienne them, depending on the dish you want to accompany.

  • 3 stalks celery
  • 10.5 oz cauliflower (florets)
  • 3.5 oz Tropea red onion
  • 3.5 oz golden onion

  • 5.3 oz green beans (trimmed)
  • 10.5 oz carrots
  • 6.34 cups water (approximately)
  • 6.34 cups vinegar (white)
  • 2 tbsps salt
  • 2 tbsps sugar
  • to taste whole peppercorns

Steps

To prepare the giardiniera, start by washing and thoroughly drying all the vegetables.

  • With a knife, cut the celery into chunks

  • Move on to the cauliflower, separating the florets, you can use any color.

  • Leave the cucumber skin on and cut it into 0.8-inch sticks, and finally, cut the onions into coarse pieces.

  • Cut the bell peppers into not too large strips and finally cut the carrots into slices or sticks as you prefer.

  • When you have finished cleaning and cutting all the vegetables, start filling the previously sterilized jars (500 ml), alternating the vegetables as you like, trying not to leave empty spaces between one vegetable and another. Stop with the layer of vegetables about an inch from the rim

  • Put the water, vinegar, salt, sugar, and whole peppercorns in a pot.

    Boil while stirring until the salt and sugar are completely dissolved.

  • Cover the vegetables with the liquid up to the brim and seal the jars, making sure to leave about 0.8 inches between the lid and the food

  • Place a towel at the bottom of a pot and then position the filled jars.

  • cover the jars with the towel and bring to a boil, leaving to boil for about 40 minutes.

Storage Tips

The pickled vegetable giardiniera can be stored for 3 months, provided the vacuum has been done correctly and the jars are stored in a cool, dry place, away from sources of light and heat.

Advice,

It is advised to wait at least 1 month before consuming the giardiniera. Once each jar is opened, store in the refrigerator and consume within 3-4 days at most.
