- 14 oz pork loin (thinly sliced; you can substitute veal, chicken, or fish fillets.)
- 2 1/4 cups breadcrumbs (seasoned Sicilian-style (see linked recipe))
- 2 eggs
- 1 1/4 cups tomato passata
- 3 tbsp extra virgin olive oil
- 3.5 oz mozzarella (well drained or smoked provola)
- to taste oregano
- to taste basil
- to taste flour

Steps
Let’s go to the kitchen to prepare the…
Have the butcher cut pork loin slices not too thin; otherwise cutlets baked in the oven become dry and stringy.
Prepare Sicilian-style seasoned breadcrumbs in a bowl following this recipe, click here. Use bread that is not too dry, otherwise the breadcrumbs become too fine and dry.
Beat the eggs, flour the pork slices and dip each one in the egg,
Coat them in breadcrumbs on both sides.
Press well so the coating sticks.
Finish coating all the slices.
Pour the tomato passata into a bowl and season with salt, pepper, oregano and basil.
Cut the provola or mozzarella into cubes and set aside.
Arrange all the slices in the baking tray, and spread some tomato passata over each slice.
At this point do not put the provola / mozzarella yet; we will add it 5 minutes before taking them out, with the oven turned off.
Bake for 15 minutes on the grill setting in the oven at 392°F. After the time, turn off the oven and distribute the mozzarella on each slice. Put them back in the turned-off oven for 5 minutes.
Serve piping hot. Here are the Chicken Cutlets Pizzaiola-Style baked in the oven.
Place the cutlets in the air fryer drawer with suitable parchment paper underneath, spray some oil on them and put a little tomato passata on each cutlet.
Cook for 8 minutes at 392°F after preheating.
After the time, add the cheese and continue cooking at 392°F for another 2 minutes.
