  • 1.76 oz roasting herbs
  • 1 sprig rosemary
  • 2 tbsps extra virgin olive oil
  • to taste salt
  • to taste pepper
  • 1 clove garlic
  • 0.35 oz sage
  • 0.18 oz chives
  • 5.29 oz coarse salt
  • 0.18 oz parsley
  • 0.18 oz basil
  • 0.18 oz lemon thyme
  • 4 leaves bay leaf
  • 1 sprig wild fennel

What we need to prepare

  • Potato peeler
  • Baking paper
  • Knife
  • Baking tray
  • Chopper
  • Bowl
  • 1 Oven

Preparation

Let’s prepare the herbs at home

  • Take the chopper, and insert all the herbs and 1 clove of garlic, add the coarse salt, and chop until you get a fine powder.

  • Peel the potatoes and cut them into wedges, rinse them under running water, then drain and place them in a bowl.

  • Pour over the evo oil, a pinch of salt and pepper, and about 1 generous tablespoon of herbs.

  • Massage the potatoes and let them rest for 5 minutes.

    Meanwhile, preheat the oven to 375°F fan.

  • Place a sheet of baking paper, previously wet and wrung out, on a baking tray. Pour the potatoes over it, and some rosemary sprigs.

  • Bake in the oven for 15 minutes, then change the cooking mode and activate the grill still at 375°F for another 5 minutes.

  • They should look like this, but if you want them even more golden, leave them under the grill for a few more minutes, but be careful not to burn them.

  • Serve hot, as an accompaniment to meat or fish.

    In the air fryer, they cook for 20 minutes at 392°F
