Praline nuts are a traditional festive sweet snack, very easy to make, and irresistible.
One leads to another.

For this recipe, we’ll use almonds, hazelnuts, and cashews.
Praline nuts have the special feature that they won’t stick together during preparation, maintaining a sandy texture and can be enjoyed one by one.
Praline nuts, also known as sandy nuts, are often found at street fairs and Christmas markets, either mixed together or individually.

To prepare this recipe, we need very few ingredients: almonds, hazelnuts, pecans, sugar, water, and vanilla sugar.
If you prefer, you can prepare all three nuts or just one of them.
It’s very simple to make, just put all the ingredients in a pan on the stove and cook while stirring until the sugar caramelizes and becomes sandy in texture.

  • Place a non-stick pan on the stove, combine the nuts, the sugar, the water, and the vanilla sugar.
Mix everything with a wooden spoon.

  • You’ll see the water start to boil and dissolve the sugar,
at a certain point, it will start to solidify, becoming sandy.
Keep stirring well and remove the pan from the heat only when you hear a slight popping sound.

  • Prepare a sheet of parchment paper, pour the praline nuts, spacing each one, and let them cool well so they won’t stick together anymore.

  • Only when they have cooled can you transfer the praline nuts into separate bowls or combine them together.
