  • 2 cups all-purpose flour (type 00) (or FiberPasta (250 g))
  • 3 eggs
  • 3/4 cup granulated sugar (or about 1 cup (190 g) powdered erythritol)
  • 6 tbsp sunflower oil (or about 1/2 cup (100 g) yogurt)
  • 3.5 tbsp milk (if you use FiberPasta flour use about 75 g (roughly 1/3 cup))
  • 1 packet (about 1 tbsp) baking powder
  • to taste lemon zest (organic, grated)
  • to taste blanched almonds
  • to taste chocolate chips (or candied fruit)
  • 1 egg white (about 25 g) egg white
  • 1/4 cup almonds (blanched and unblanched (35 g))
  • 1/4 cup powdered sugar (confectioners') (about 35 g)
  • 2 drops bitter almond extract
  • to taste almonds
  • to taste pearl sugar (if diabetic, better to use almond granules)

Let’s go to the kitchen

  • The first thing to do is check whether a 500 g (about 1.1 lb) colomba mold fits in your air fryer basket.

    Crack the eggs into a bowl and add the sugar.

  • Beat everything with an electric whisk until you obtain a light and frothy mixture.
    Add the milk, the sunflower oil, the grated lemon zest and half the sifted flour.

  • Mix, using a hand or electric whisk, add the baking powder and the rest of the flour, then continue to combine until you obtain a smooth, homogeneous consistency.
    At this point pour the batter into a 500-gram colomba mold.

  • Transfer everything to the air fryer basket and cook at 320°F for 25 minutes and then…..

  • To prepare the colomba glaze start with the egg white, which should be poured into a blender.

    The ingredients needed are few and very simple but the final result is truly excellent.

  • Also in the blender you can add the almonds, the powdered sugar and finally the drops of bitter almond extract.

  • Now all that remains is to blend until you have reached the desired consistency.

    The glaze should be fairly runny; however, if you prefer, you can leave it a bit coarser so you can feel pieces of almonds. Adjust processing time accordingly.

  • After the first part of the colomba’s cooking time, take it out and quickly spread the glaze, place the whole almonds and the pearl sugar on top.
    Return the glazed colomba to the air fryer basket and continue cooking at 302°F for another 5 minutes.
