  • 1 roll puff pastry (or whole wheat or brisée (shortcrust))
  • 3 apples
  • 8 tbsp fruit jam/compote (I use sugar-free, choose as you like (about 8 tbsp ≈ 1/2 cup))
  • 8 tbsp chopped almonds (or chopped walnuts, as preferred)
  • 8 tbsp raisins (or dark chocolate chips)
  • 1 pan release spray
  • 1 egg yolk
  • 2 tbsp milk (about 30 ml)
  • to taste powdered sugar (optional)

  • 8 Tartlet molds for 4 in tartlet
  • 1 Baking tray to hold the molds
  • 1 Pastry brush silicone

Steps

To make them

  • Remove the pastry roll from the fridge at least 30 minutes before, and preheat the oven to 347°F (conventional mode).

    Then spray a little pan release spray over the entire surface of the molds and brush with a silicone brush.

  • Gently unroll the puff pastry and place the mold upside down on it, cutting a square around each mold and pressing lightly.

    Also cut the parchment paper that contains the pastry.

  • Bake the tartlets for about 15 minutes, then remove the tray from the oven and let them cool before unmolding.
