The combination of fruit and prawns might seem a bit strange, but I am used to pairing them, and I recommend trying this delicacy.

The buttery softness, the sweetness of the prawns, and the acidity of the raspberries give this dish a spectacular touch that bursts in the mouth.

  • 1 1/2 cups Carnaroli rice
  • 3 cups vegetable broth
  • 3 tbsp butter
  • 1/2 cup white wine
  • 9 oz raspberries (or strawberries)
  • 1 tbsp lemon zest
  • to taste mint
  • to taste wild fennel (optional)
  • to taste salt
  • to taste pepper
  • 7 oz prawns (weighed shelled)

Steps

Let’s go to the kitchen

  • First, prepare a vegetable broth or use homemade vegetable cubes, click here.

  • Clean the prawns, remove the intestine, and cut them into 1/2 inch pieces.

    Take half of these pieces and put them in a small bowl, along with the grated lemon peel.

  • Wash the raspberries or strawberries, depending on what you find, and also cut them into 1/2 inch pieces

  • In a pot, melt the butter with minced garlic and fry. Then add the remaining half of the prawns cut into 1/2 inch pieces, stir and cook for about 1 minute. Now gently remove them with a slotted spoon and set aside.

  • In the butter that is in the pan now toast the rice for about two minutes, stirring continuously. At this point, deglaze everything with white wine.

  • When it has evaporated, add a few ladles of vegetable broth to barely cover it and then let it cook until it has absorbed all the liquid. Add a little more broth until you feel that the rice is almost done.

  • When there is 1 minute left to the end of the rice cooking, it’s time for 3/4 of the raspberries: add them together with the previously scalded prawns to the risotto and mix well.

    You will see that the fruit will color the risotto a soft pinkish hue.

  • Now only the final touch is missing: take a small piece of butter and add it to the risotto along with the raspberries you had set aside and the raw prawn pieces with the lemon peel, and stir everything off the heat.

  • Serve immediately, garnishing with a mint leaf and a tuft of fresh wild fennel. The Risotto with prawns and raspberries is ready.

  • Place the garlic in the bowl and chop: 5 sec./speed 5. Gather at the bottom with the spatula.

    Add butter and flavor: 3 min./248°F/speed 1

    Add 3/4 of the raspberries and half of the prawns cut into pieces and cook: 3 min./212°F/speed 1

  • Add the rice and toast without measuring cup: 3 min./248°F/reverse/speed 1.

    Add the wine and evaporate: 1 min./212°F/reverse/speed 1 without measuring cup.

  • Add the vegetable broth and salt, mix thoroughly with the spatula to move the rice and cook with the basket instead of the measuring cup: 14 min./212°F/reverse/speed 1.

  • Now add the part of raw raspberries and prawns, mix and let the risotto rest in the bowl for 1 minute and serve garnished with whole raspberries, mint, and fennel. With our friend Bimby, we have prepared the Risotto with prawns and raspberries.
