Cooking in a pan or wok
Clean the artichoke hearts by removing the internal fuzz.
Fill a large bowl with cold water and add the lemon juice. Soak the artichoke hearts in it until use.
A minute before using them, cut them into wedges and drain the water and lemon.
In a pan or wok, place the garlic, EVO oil, and chopped parsley, and let them flavor for 2 minutes.
At this point, add the artichokes, a small pinch of salt, a grind of pepper, and stir over high heat for a few minutes.
Now add half a glass of water, cover, and let it cook for about 10 minutes, checking occasionally, but make sure the water doesn’t dry up.
When you can easily pierce the artichoke hearts with a fork, you can turn off the heat.
