- to taste lemon juice
- 1 clove garlic
- 1 bunch chopped parsley
- 2 tbsps extra virgin olive oil
- 1/2 cup water
- to taste salt
- 1 pinch pepper

Pan or Wok Cooking
Clean the artichoke hearts by removing the inner thistle.
Fill a large bowl with cold water and add lemon juice. Soak the artichoke hearts and let them soak until use.
One minute before use, slice them into wedges and drain the water and lemon.
In a pan or wok, place garlic, evo oil, and chopped parsley, and let them flavor for 2 minutes.
At this point, add the artichokes, a small pinch of salt, a grind of pepper, and mix on high heat for a few minutes.
Now add the half cup of water, cover, and let cook for about 10 minutes, checking occasionally, but be sure the water does not dry up.
When you can easily pierce the artichoke hearts with a fork, you can turn off the heat.
