  • 1 cup breadcrumbs
  • 1 oz Pecorino Romano (grated)
  • 1 bunch chopped parsley

Traditional recipe

  • Choose fresh chard,

    wash it.

    Boil some water in a rather large pot, with a pinch of salt.

    Then drain them and leave them in the colander overnight.

  • After this time, place them on a cutting board and cut them into pieces,

  • transfer them to a bowl, add 2 eggs, 1 cup of breadcrumbs, 1 clove of garlic, a bunch of chopped parsley, 1 oz of Pecorino or Parmesan, a small grind of pepper.

  • Mix well.

    In a pan, put some extra virgin olive oil and heat it, then take the mixture by spoonfuls and put it in the pan.

    Cook for 2 minutes, and, as soon as it is colored, turn it over and continue until fully golden.

  • Place the chard fritters on a paper towel to absorb the excess oil.

    Now you can serve them accompanied by balsamic vinegar glaze or anything else you like
