Sesame and Tangerine Tuna Patties.
An imaginary journey to Japan with this dish made in Sicily, but with an eye on the East.
Very easy to make, they are flattened tuna balls breaded in sesame and grilled, immersed in a soy sauce and tangerine zest.
You can also use other types of blue fish for the patties.
Excellent as a main course, but also as an appetizer or finger food.

Ingredients
for the patties
- 10.5 oz tuna
- 1 egg
- 1 cup breadcrumbs
- 1/4 cup Pecorino Romano (grated)
- 1 clove garlic (minced)
- 1 bunch parsley (minced)
- to taste Extra virgin olive oil
- to taste salt
- 7 oz sesame seeds
- to taste pepper
- 3 Tangerines (or clementines)
- 1/4 cup flour (heaping)
- 2 glasses water
- 1/4 cup Soy sauce
- to taste balsamic vinegar glaze

Preparation of Sesame and Tangerine Tuna Patties
Choose good fresh tuna, and have it cut into nice slices.
Chop the slices with a knife, do not blend, otherwise the mixture will be fibrous.
Put the mince in a bowl, add the breadcrumbs, grated Pecorino, chopped parsley and 1 minced garlic clove, salt and pepper, the egg, 2 tablespoons of extra virgin olive oil and 3 tablespoons of water.
Knead, the mixture must be soft.
Wet your hands with water, form small balls, and roll them in sesame, making the seeds adhere on all sides.
Then flatten them forming mini burgers.
Place them on a sheet of parchment paper.
Heat up a cast iron grill very strongly, and roast the patties for 3 minutes on each side.
Meanwhile, while they are cooking, you can prepare the tangerine sauce.
Peel the tangerines or clementines, set aside the fruit, and chop the peel
chop it very finely
In a small pan add the flour, soy sauce, chopped tangerine peel, a pinch of pepper.
and 2 glasses of water, and mix well.
Then put on the heat.
stir and let thicken slightly.
You have made the tangerine sauce.
Plate by putting the tangerine sauce in the center, the patties on top, and finally decorate with soy reduction and pieces of tangerine.
