Sicilian Crepes with Broccoli
An economical, traditional recipe that can be made with a food processor.
These small savory delights are ideal as snacks, appetizers, or finger food. Yes, I know, they are a little indulgence, but sometimes we need to shake up our metabolism, especially after a busy day, to reward ourselves after a period of restriction.
On the bright side, there are lots of broccoli to lighten the batter, but I assure you, one leads to another. You can also enrich them with bacon bits for the cold cuts version or with anchovy pieces for the traditional version.
Additionally, you can make this recipe with any type of vegetable, even mixed.

- 10.6 oz broccoli (already boiled or steamed)
- 2 eggs
- 1 packet dry yeast
- 3.5 oz bacon (or 10 anchovies in oil)
- 7/8 cup water (lukewarm)
- 2 teaspoons salt
- 1 teaspoon sugar
- 1 pinch pepper
- 7/8 cup sunflower oil
- 3/4 cup flour

Steps
Sicilian Crepes with Broccoli
Take the pre-boiled broccoli, cut them into not too small pieces
and let them drain in a colander.
Cut the bacon into cubes, or buy it already diced.
Or if you’re using anchovies in oil, drain them well and chop them
The starter dough
Put 1 ounce of flour, the sugar, and the yeast packet in a small bowl.
Add 1 cup of lukewarm water taken from what you have available, then cover with plastic wrap and wait 15 minutes.
After the time has passed it will look like this.
Now it’s time to assemble all the ingredients: Pour the flour, eggs, salt, broccoli, bacon or anchovies, and the starter dough you just made.
Mix for about 15 minutes, then cover with plastic wrap and let rest for 4 hours.
After the time has passed, heat plenty of seed oil in a pan or fryer.
Once the oil is hot, spoon in the mixture, cook about 2 minutes per side, then flip.
Then place the crepes on absorbent paper, and serve hot.
Put the yeast packet, the teaspoon of sugar, 1 ounce of flour from what you have available, and 3.5 oz of water in the mixing bowl. 3 min at 98°F speed 2.
Let the starter dough rest in the mixing bowl for 30 minutes. After 30 minutes, add all the other ingredients 4 min. knead.
Now add the broccoli, bacon, or anchovies, and mix 1 minute counterclockwise speed 1
Pour the mixture into a bowl, cover with plastic wrap, and let rest for 5 hours.
After the time has passed, heat plenty of seed oil in a pan or fryer
When the oil has reached a sufficiently high temperature, spoon in the mixture, cook about 2 minutes per side, then flip.
Place the crepes on absorbent paper, and serve hot.
