They’re easy to make, and the novelty is you can also skip frying the eggplants, because I’ll explain how to bake them sliced in the oven without frying anything.

  • 3.5 oz prosciutto
  • 3.5 oz primosale (or provola cheese of choice)
  • 1 cup breadcrumbs (Sicilian seasoned)
  • 17.6 oz tomato sauce
  • to taste salt
  • to taste pepper
  • to taste basil
  • to taste extra virgin olive oil

  • 1 Microwave Oven

Steps

To make

  • Start with the preparation of the eggplants. Wash them, remove the stalk, and slice them not too thinly.

    For this recipe, you should obtain 3 slices per serving for a total of at least 12 slices for 4 servings.

  • Place the eggplants on a baking tray with parchment paper, and brush them with evo oil, salt, and pepper.

  • Turn on the grill of your oven to 392°F and cook them for about 15 minutes. Then take them out and let them cool slightly

  • Slightly moisten the breadcrumbs with 2 tablespoons of water and 1 of evo oil.
