Sicilian Lentil Soup from Villalba I.G.P. Today I present you a version made with a pressure cooker. You can cook the legumes traditionally, but it will take longer, and later you will find the recipe with the Bimby.

- 7.05 oz potatoes
- 2.47 oz cherry tomatoes (ripe)
- 1.76 oz onion
- 2.12 oz celery
- 1 clove garlic
- 3.53 oz carrot
- 2.12 tbsp extra virgin olive oil
- 1 chili pepper (optional)
- 1 tsp salt
- 4.23 cups water (approximately)

Preparation
Traditional cooking recipe
I put the lentils in a pot with 4 cups of water, and soaked them for about 1 hour.
Peeled the potato, onion, carrot, garlic clove, washed the cherry tomatoes and celery, kept them whole
If you are diabetic, do not use carrots and potatoes.
Once the soaking period of the lentils is complete, I added the vegetables to the pot.
In this case, I used the pressure cooker and cooked for about 20 minutes from the moment it hissed, but if you want to use a regular pot, the cooking time will double.
At the end of cooking, I removed the excess broth and set it aside.
I kept a few spoonfuls aside for decoration.
Then I adjusted with salt, pepper, and optionally chili pepper, and blended everything with an immersion blender to make it creamy.
I served it with a drizzle of oil and croutons, and for my grandson, I prepared a delicious meal, besides making a delicious Sicilian Lentil Soup from Villalba I.G.P. Delicious in pot.

Soak the lentils at least the night before with 4 cups of water.
Place the onion, carrot, and celery in the bowl, chop: 5 sec./speed 8. Gather at the bottom with the spatula.
Add the oil, cherry tomatoes, and diced potato, sauté: 5 min./248°F/speed 1.
Add the salt, lentils, and soaking water, cook: 45 min./212°F/reverse/speed teaspoon with the basket instead of the measuring cup to prevent splashes.
At the end of cooking, remove a ladleful of lentils without the broth and set it aside for decoration, then put the measuring cup and blend, 10 sec speed 10.
Serve with a drizzle of oil and croutons, and for my grandson, I prepared a delicious meal, besides making a delicious Sicilian Lentil Soup from Villalba I.G.P. Delicious with our Bimby.
