Sicilian Sausage in Tomato Sauce

Delicious, especially the Sicilian one flavored with wild fennel seeds, and sometimes stuffed only with caciocavallo, and sometimes enriched with tomato and escarole.

Today I propose it to you with a fresh mushroom sauce, and you can also season the pasta.

The sausage is typically a winter dish, and we could cook it not only with sauce but also on the grill, or in the oven perhaps accompanied by aromatic potatoes.

The only thing that might change is the size, as the typical Sicilian is thin, while elsewhere it is customary to use a thicker casing, so you will need to increase the cooking times.

  • 1.54 lbs sausage
  • Half Tropea red onion
  • 1 carrot
  • 1 stalk celery
  • 10.5 oz mushrooms
  • 24.7 oz tomato puree
  • to taste salt
  • 2.5 tbsp extra virgin olive oil

Steps

  • Chop onion, celery, and carrots

  • Clean the mushrooms with a cloth and cut them into pieces.

  • Sauté the vegetable mix for 3 minutes then add the mushrooms and cook for at least another 4 minutes, add a small pinch of salt so the mushrooms release excess water

  • Then add the tomato puree and sausage. Cover with a splash guard and cook for 20 minutes from boiling if it is thin Sicilian sausage, if it is thick sausage increase the cooking time up to 40 minutes.
