- 14 oz fennel (weighed after cleaning)
- 1 cup breadcrumbs (Sicilian seasoned)
- 3.5 tbsp extra virgin olive oil
- to taste salt
- to taste pepper

Steps
Let’s go to the kitchen
Turn on the static oven at 392°F for the first part of the cooking.
Clean the fennel, removing the outer leaves, the greener ones.
Cut the fennel first in half, then into thin slices.
Place them in a bowl, and season with salt and pepper to taste.
Prepare the Sicilian seasoned breadcrumbs, following the recipe by clicking here.
Moisten the breadcrumbs with extra virgin olive oil, and mix well.
Now pour the breadcrumbs into the bowl with the previously seasoned fennel.
Make sure the seasoning takes all the slices well.
Transfer the fennel to a fairly wide tray with a sheet of parchment paper underneath.
The excess breadcrumbs in the bowl, put it on top.
Bake for 5 minutes in a ventilated oven, then at maximum temperature with grill for another 10 minutes.
After the time has elapsed, open the oven door and keep them inside until the tray can be taken by hand. But do not wait long otherwise they lose crunchiness.
