  • 9 oz mascarpone
  • 9 oz ladyfingers
  • 1.75 oz unsweetened cocoa powder
  • 4 coffee shots (cold)
  • 5.5 tbsp sugar
  • 6 strawberries (optional)
  • 3 tbsp water (for pasteurization)

  • Take the mascarpone and eggs out of the fridge at least 30 minutes before preparation

  • Separate the yolks from the whites, then transfer the yolks into a bowl or mixer and whip them with the whisk. Meanwhile, heat 3 tbsp of water with 4.5 tbsp of sugar from the recipe in a small saucepan until it reaches 250°F

  • at this point, add the water and sugar syrup to the whipped yolks and continue to whip at the highest speed until they become nice and frothy.

  • Now that they are well whipped and pasteurized, gently mix them with the mascarpone a little at a time using a spatula and making circular movements from top to bottom to incorporate air and avoid deflating the mixture.

  • Separately, whip the egg whites until stiff, then add them gradually to the mascarpone until you get a smooth and homogeneous mixture. Gently combine the two mixtures with a spatula using movements from top to bottom to prevent deflating.

  • Assemble the tiramisu in a glass or jar like this: start from the bottom of the glass with a layer of soaked ladyfingers, then pour in a layer of mascarpone cream.

    Repeat the sequence with another layer of previously soaked ladyfingers, a dusting of cocoa, then pour another layer of mascarpone cream.
