Snake Masks in Shortcrust Pastry
Like a joke this snake, it indeed looks like a mask, but in reality, it is a snack, it could be a dessert, but it is savory.
In the kitchen, any joke counts. The pink color is natural, given by red beets.

- 2/3 cup butter
- 1 1/2 teaspoon Salt
- 1.75 oz boiled red beet (precooked)
- 3.5 tablespoons water

Preparation of Snake Masks in Shortcrust Pastry
Let’s start with the preparation of the shortcrust pastry: put 1 cup of all-purpose flour, the butter in pieces, and the water in the mixer bowl, and let it go for a short period, about 20/30 seconds depending on the machine.
With the Thermomix 20 sec. speed 4

Take 3/4, compact it on a work surface, wrap it in plastic wrap, and let it rest in the fridge for at least 30 minutes, meanwhile…
Cut the 1.75 oz of red beet into pieces,
Put it in the bowl, along with 1/2 cup of flour, and grind everything.
With the Thermomix 10 sec speed 8
Add the rest of the shortcrust pastry you kneaded before to this mixture, and let the mixer run for another 20 seconds. with the Thermomix speed 4
When the pink dough is ready, compact it also on a work surface, and if you feel it’s a bit moist, you can add a dusting of flour.
Wrap it in plastic wrap and let it rest in the fridge for at least 30 minutes.
While waiting for everything to be ready, draw and then cut out various mask shapes on baking paper
After the resting time in the fridge, take out the white dough, and after widening it a bit with a rolling pin, pass it through the pasta machine, first with the thick setting, and then with a medium thickness, dusting with flour where needed.
Repeat the operation, adding a pinch more flour, as this dough with the red beet will be softer.
Make strips with the pastry cutter wheel, brush them with a little water, and place them on the red dough, then roll over them with a rolling pin.
Now put the paper mask on the dough, and cut out the edges. Make as many masks as you have dough, and if necessary, you can also cut strips for breadsticks and cookies.
Bake in a preheated oven at 340°F fan, or 355°F static for about 10/15 minutes, depending on the oven.
