Soft Crumble with Banana and Orange
Traditional and Thermomix Recipe
A fantastic snack today for my grandchildren, delicious and practically very quick and easy to make. It will only take a few minutes, and the fragrance will fill the entire house.
You can make it with all kinds of jam or fruit compote; I used my homemade sugar-free orange one. The softness of the cake meets the crunchiness of the almonds that we will sprinkle on top, and to make this dessert more protein-rich, we will also have almond flour in the dough, to meet everyone’s nutritional needs. I will also show you variations regarding the sweetener or other types of dietary flour

- 3.5 oz butter (soft)
- 1.5 cups all-purpose flour (or whole wheat)
- 1 cup almonds (or almond flour)
- 1 egg
- 1 packet baking powder
- 1/3 cup sugar (or 1 oz stevia or 1/3 cup erythritol)
- 3.5 oz orange marmalade (my sugar-free compote)
- 3.4 oz water
- 2 banana
- 1 oz almond slivers
- 1 pinch ground cinnamon

- 1 Bowl
- 1 Knife

Traditional Recipe
If you don’t have almond flour, you can use almonds whether they are peeled or with the skin, you will need 100 g.
Put them in a food processor and blend until they are powdered.
Take the butter out of the fridge so that it is soft like an ointment
Preheat the oven to 350°F. Butter and flour a baking pan or cover it with parchment paper with a removable bottom (Ø 24 cm)
In a large bowl, put the all-purpose flour, almond flour, butter, egg, ground cinnamon, baking powder, and sugar, and knead without compacting the mixture. It should be a crumbly mixture. To do this, gather the mixture in your hands and rub them together.
Transfer 2/3 of the crumbs to the bottom of the baking pan, spreading them evenly without pressing.
In a small bowl, mix the orange compote with water, mix well.
Spread 3/4 of the orange compote with water over the crumbs.
Slice the bananas and spread them over the orange compote.
Brush the banana slices with the remaining orange compote and water to prevent them from browning.
Cover with the remaining crumbs and almond slivers.
Bake in a preheated oven for 30 – 40 minutes (350°F). The crumble should be golden on top to be cooked.
Let the crumble cool before removing from the pan.
Put 100 g of almonds in the bowl and blend for 20 sec vel 10, you have made almond flour.
Put all-purpose flour, almond flour, butter, egg, ground cinnamon, baking powder, and sugar in the bowl, knead: 10 sec./vel. 5. It will result in a crumbly mixture.

Without washing the bowl, put the orange compote and water in the bowl and mix for 1 min. vel 3, set aside in a small bowl.
Transfer 2/3 of the crumbs to the bottom of the baking pan, spreading them evenly without pressing

Brush the banana slices with the remaining orange compote and water to prevent them from browning.
Cover with the remaining crumbs and almond slivers.

The Soft Crumble with Banana and Orange is ready, remove it from the pan when warm or cold.

Storage: you can keep it out of the fridge for up to 3 days covered.
Variations: with this recipe, you can use any fruit and any jam or compote with or without sugar.
