Spaghetti with luccio di mare or barracuda
Traditional pot recipe and also for the Thermomix.
Today I offer you a light and tasty dish that is at the same time easy and economical to make. You can prepare this recipe with any type of delicate white-fleshed fish. Ideal for all ages, especially for those who need to follow a light diet.

- 1 1/2 lb luccio di mare (sea pike) (or barracuda)
- 2 cloves garlic
- 1 bunch parsley
- 3/4 cup ripe tomatoes (ripe)
- 2 tbsp extra virgin olive oil
- 4 1/4 cups water
- 1 tsp salt
- to taste pepper
- 10 1/2 oz spaghetti
- to taste roasting aromatics

This is the barracuda (luccio di mare).
Fillet it or have it filleted, but keep the head and bones, which we will use to make a good fish fumet (broth).

Place the fish in the Varoma tray and close with the lid.
Put the parsley in the mixing bowl and chop for 10 sec at speed 7, then scrape down with the spatula and set aside.

add 2 tbsp of extra virgin olive oil and sauté for 3 min at 230°F (110°C) at speed 1 with the simmering basket in place of the measuring cup.

1 level teaspoon of salt,
4 1/4 cups of water (1 L).
At this point put the lid on and place the Varoma with the fish in it.
Cook for 20 min at Varoma, speed 1.
When cooking is finished, remove the Varoma and set it aside, then blend the fumet for 20 sec at speed 5.

strain the fumet.
Return the strained fumet to the mixing bowl and bring it to a boil for 5 min at 212°F (100°C) at ‘teaspoon’ speed, with the basket in place.
After that time, open the measuring cup and add 14 oz of spaghetti (400 g). Cook for the time indicated on the package at 212°F (100°C) at ‘teaspoon’ speed, counterclockwise, with the basket on top.
At the end of cooking transfer the pasta into a bowl, add the fish, the parsley and a little freshly ground pepper.

In a skillet, sauté the chopped garlic with the parsley and the extra virgin olive oil for a few minutes,
Then add the chopped tomatoes, the water and the salt. Bring back to a boil, then add the fish, starting with the bones.
Cook them for about 20 minutes.
After that time, strain the broth with a strainer.
and add the fillets which should cook only 3 or 4 minutes
Meanwhile bring the pot of water for the pasta to a boil, and as soon as it boils add the pasta.
Cook it al dente.
At the end of cooking transfer the pasta into a bowl, add the fish, the parsley and a little freshly ground pepper.
