- 1 clove garlic
- 3.5 oz tomatoes (Very ripe)
- 5.3 oz smoked provola (Buffalo)
- to taste chopped parsley
- 5.3 oz spaghetti (No. 7)
- 1/3 cup White wine
- 2 tbsp butter
- 2/3 cup whole milk

Start by selecting excellent fresh prawns, Remove the heads…
Crush them and collect the juice,
Remove the prawn shells, and set them aside.
Cut the tomato into pieces, chop the parsley, but leave some whole.
In a wok, put the butter, oil, and crushed garlic clove. Sauté for 1 minute, then…
add the heads with all the juice. Cook for 3 minutes and then….
Deglaze with the wine, let it evaporate, add a little water, cook for 3 minutes, and then…
strain the broth.
Separately, in a wok, add a drizzle of oil, cook the tomato pieces, and the parsley, pressing it with a spoon, then…
add the broth you previously strained.

Cut it into pieces, place it in a glass bowl, add 2/3 cup of milk, cover with plastic wrap and….
microwave for 2 minutes….

remove the solid part left of the provola, or you can even filter it with a strainer.
Put the pasta water on the stove, and remove the prawns from the sauce you prepared earlier……
Cook the spaghetti 3/4 of the way, then put them in the wok with the sauce
extend the cooking liquid with the smoked provola milk and, complete the risotto-style cooking.
Plate up, adding the prawns on top and a sprinkle of parsley.
