A healthy breakfast for the whole family, but especially for those who follow a low glycemic index diet.
The Spelt Cookies Filled with Orange are easy to make, you can make them together with your little ones using any shape, or you can also use a glass if you don’t have cookie cutters at home.
Between one cookie and another, I put some sugar-free orange compote, the one without peel or the orange compote with peel, which is the one I prefer, as it is richer in fiber, but you can use other flavors of compotes or even sugar-free protein creams.

  • 1 pinch salt
  • 1/4 cup lemon juice (or orange juice)
  • 2 teaspoons lemon zest
  • 1 3/4 cups whole spelt flour (or other low G.I. or non-whole spelt flour)
  • 1/4 cup sunflower oil (or coconut oil)
  • 1 1/2 teaspoons baking powder
  • 1/4 cup orange marmalade (sugar-free)
  • 2 tablespoons erythritol (to be powdered)

Steps

Preparations for all versions of the

  • The egg must be at room temperature. Squeeze a lemon to get 1/4 cup of juice, then grate its peel, and sift the flour.

    In a blender, blend 2 tablespoons of erythritol and set aside.

  • In a bowl, place the egg, erythritol, and vanillin, and beat with a hand mixer.
    Add the lemon juice and grated peel, and while beating, gradually add the oil and baking powder.

  • Now set aside the mixer and continue by hand adding the sifted flour into the mixture.

  • Knead and form a dough ball, wrap it in plastic wrap. Refrigerate for at least 20 minutes.

  • After the time has elapsed, divide the dough into 2 equal parts.
    Place the dough pieces between 2 sheets of parchment paper and with the help of a rolling pin, roll out the dough to a thickness of about 1/10 inch.
