Strawberry and Yogurt Cloud Cake,
The classic cake that every mom or grandma eventually prepares for their family.
Today, I’ll offer you a light version, without sugar or fats. To sweeten, I’ll use a bit of sweetener and a little bit of strawberries, which will create a softness on the palate that sends you into ecstasy.

- 10.5 oz Strawberries
- 1 1/2 Lemon Juice
- 3 Eggs
- 1.75 cups All-purpose Flour (Or whole-wheat or fiberpasta)
- 1 packet Vanilla Powder
- 1 packet Baking Powder
- 5.3 oz Erythritol (Or 2.1 oz stevia)
- 5.3 oz Plain Yogurt (or Greek)
- Salt (a pinch)

Preparation

First, turn on the oven to static mode, at 356°F. Squeeze one lemon and collect half the juice.
Starting from the raw material, it’s important to choose quality and organic.
Wash the strawberries in abundant water, several times, and let them dry.
Peel the apple and cut it into slices, place it in a bowl, and pour the lemon juice over it, stirring so that the lemon mixes well to prevent browning.
Wash and cut the strawberries, make slices, keep the nicest ones aside, while,
Line the springform pan with parchment paper and place strawberry slices along the edges with the tip upwards.
We’ll use the less pretty ones for the inside.
Put the sweetener and eggs in the stand mixer and start beating.
With Bimby 3 min. butterfly speed 3
When the mixture is whipped, add the flour little by little and continue beating.
Add the vanilla, yogurt, salt, and when these ingredients are well combined, add the baking powder.
As soon as the mixture appears smooth and homogeneous, turn off the stand mixer or the Bimby.
Pour half of it into the baking pan,
Add the “uglier” pieces of strawberries, but save enough for the final decoration.
Complete with the rest of the mixture.
Decorate with apple and strawberry slices to taste.
Put in an already hot oven for 20 minutes at 356°F fan.
Check the cooking with a toothpick.
When you take it out, wait for it to cool, then remove it from the pan and dust with powdered sugar or sweetener.
