Strawberry Chia Seed Pudding. In English, Chia pudding, is a dessert/breakfast/snack, light yet delicious and nutritious, made with healthy ingredients suitable for omnivorous, vegan, or vegetarian diets, depending on whether you use animal or plant-based milk or yogurt.
Suitable for all ages. These seeds have many beneficial properties, including anti-colitis, anti-cholesterol, and slimming effects, as well as preventive action against diabetes and osteoporosis, and anti-inflammatory action for the gastric mucosa and hormone-balancing for women in pre and menopause.
To sweeten it if you like it sweet, you can use brown sugar, or as in my case, a sweetener.
It doesn’t require cooking but needs a bit of time to rest in the fridge, at least 2 hours to enjoy it well.
You can prepare it in the evening and always have it ready in the fridge for breakfast or a snack.

  • 1 2/3 cups milk (your choice of type or yogurt)
  • 1/2 cup chia seeds
  • 1 pinch ground cinnamon
  • 1 pinch nutmeg
  • 5 tsp stevia (Or 60 g erythritol)
  • 2 cups strawberries (or other fruit)

Preparation: Strawberry Chia Seed Pudding

  • Pour the milk, nutmeg, cinnamon, and the sweetener of your choice into a glass bowl,

  • then add the chia seeds,

  • and mix with a whisk for 1 minute, repeating the process at least 5 times, so that the milk is well absorbed by the seeds, which are very light and tend to float, so it’s important to mix them several times to ensure they blend well with the milk

  • Divide the mixture into 4 cups and put it in the fridge for at least 2 hours to thicken.

  • In the meantime, take half of the strawberries and chop them with a knife or food processor, while the other half you can slice or carve as you see in my photo.
