  • 2/3 cup Greek yogurt
  • 1 egg white
  • Half lemon (zest grated)
  • Half lemon (juice)
  • 1/4 cup erythritol (or sugar)

Preparation

Traditional Version

  • Wash the strawberries, cut them into pieces, and freeze them for at least 6 hours.

  • When you are sure they are frozen, start preparing all the ingredients. Wash the lemon well.

  • Grate half the lemon, squeeze half the juice and strain it.

  • Pour the yogurt into a bowl, add the lemon zest and sweetener, and mix well.

  • Separate the egg white and set it aside.

  • Put the frozen strawberries in the food processor and grind them as if they were ice.

    Then put them in a rather large bowl, add all the ingredients, and whisk until stiff peaks form.

  • Pour the ice cream into a plastic container or enjoy it.
