- 2.2 lbs mussels (weighed clean)
- 4 eggs
- 1.5 cups breadcrumbs
- 1 clove garlic
- 1 bunch chopped parsley
- 1 oz Pecorino Romano (grated)
- 1/2 teaspoon salt (level)
- as needed vegetable oil
- 1 lemon
- 1/2 cup breadcrumbs (to set aside.)

Preparation: Stuffed Mussels in a Pan or Steamed
For all preparations.
Clean the mussels very well, detaching them from their thread, then you will see that they have a filament on the side, take it with your thumb and index finger and pull it downwards.
Rinse them several times under running water, then insert the tip of a knife sideways into the shell, cut the muscle that keeps it closed, then gently pass the knife between the two shells and the meat, detaching it.
Place the meat back into the half shell and drain any excess water.
In practice, you should open them as if you were going to eat them raw.
Put the breadcrumbs, parsley, and chopped garlic in a small bowl, a small pinch of salt and one of pepper, and the Pecorino. Mix well.
Add the eggs and beat the mixture with a fork.
It should be creamy.
With the help of a teaspoon, fill the mussels, and..
Place them in a bowl.
Sprinkle them with more breadcrumbs.
Put half an inch (1 cm) of vegetable oil in a pan, and heat it well. Then put the mussels with the filling side down and cook them for 2 minutes,
then, as soon as they are golden, turn them and cook them only for a minute on the shell side.
Absorb the excess oil on paper towels and ..
