  • 3.5 oz ground beef (lean)
  • 1 egg
  • 2 tablespoons breadcrumbs (seasoned Sicilian-style)
  • 1.8 oz scamorza cheese
  • 3 tablespoons tomato purée
  • 3 tablespoons extra virgin olive oil
  • to taste salt
  • 1 bunch Parsley
  • 1 clove Garlic
  • 3 teaspoons Pecorino Romano
  • Half onion
  • to taste pepper

Preparation of Baked Stuffed Zucchini with Meat

  • Wash, dry and trim the ends of the zucchini.

  • Cut them in half lengthwise, place them in a baking dish or in the air fryer basket and cook in the microwave for 7 minutes, or in the air fryer at 392°F for 6 minutes.

    Then let them cool.

  • After the first cooking, scoop out each zucchini being careful not to break the edges.

  • Sprinkle a little salt over the hollowed zucchini and turn them upside down so they lose excess liquid while you continue with the preparation.

  • Collect the flesh in a bowl and season with salt and pepper.

  • Next, in a non-stick pan, add a drizzle of extra virgin olive oil and a halved garlic clove without the green shoot.

  • Add the zucchini flesh and let it stew for a few minutes. Then remove the garlic and discard it.

  • Chop the flesh.

  • In another pan add a drizzle of extra virgin olive oil and the onion finely chopped and sauté for 2 minutes.

  • Add the ground meat to the soffritto and cook until it changes color. Season with salt and pepper and add the tomato purée.

  • Fold in the zucchini flesh, the seasoned breadcrumbs, and the grated Pecorino Romano, mix. Let cool.

  • Fill all the zucchini.

  • For traditional oven cooking place them on a baking sheet lined with parchment paper and drizzle with a little extra virgin olive oil. Add the provola (smoked mozzarella) diced.

  • Bake at 356°F for about 20 minutes. Then let them cool slightly.

  • In the air fryer, place the stuffed zucchini in the basket, spray with oil and cook at 356°F for 10 minutes.
