Preparation of Baked Stuffed Zucchini with Meat
Wash, dry and trim the ends of the zucchini.
Cut them in half lengthwise, place them in a baking dish or in the air fryer basket and cook in the microwave for 7 minutes, or in the air fryer at 392°F for 6 minutes.
Then let them cool.
After the first cooking, scoop out each zucchini being careful not to break the edges.
Sprinkle a little salt over the hollowed zucchini and turn them upside down so they lose excess liquid while you continue with the preparation.
Collect the flesh in a bowl and season with salt and pepper.
Next, in a non-stick pan, add a drizzle of extra virgin olive oil and a halved garlic clove without the green shoot.
Sauté and…
Add the zucchini flesh and let it stew for a few minutes. Then remove the garlic and discard it.
Chop the flesh.
In another pan add a drizzle of extra virgin olive oil and the onion finely chopped and sauté for 2 minutes.
Add the ground meat to the soffritto and cook until it changes color. Season with salt and pepper and add the tomato purée.
Fold in the zucchini flesh, the seasoned breadcrumbs, and the grated Pecorino Romano, mix. Let cool.
Fill all the zucchini.
For traditional oven cooking place them on a baking sheet lined with parchment paper and drizzle with a little extra virgin olive oil. Add the provola (smoked mozzarella) diced.
Bake at 356°F for about 20 minutes. Then let them cool slightly.
In the air fryer, place the stuffed zucchini in the basket, spray with oil and cook at 356°F for 10 minutes.
Serve warm. Here are the baked stuffed zucchini with meat, ready to enjoy.
