- 1 cup breadcrumbs (seasoned Sicilian-style see recipe)
- 2 eggs
- 1 cup zucchini (grated and squeezed)
- 2 tbsp extra virgin olive oil
- 4 tbsp water
- to taste salt
- to taste pepper

- Baking sheet non-stick wide and shallow
- Pastry ring

Swordfish and Zucchini Burgers
The first step is to season the breadcrumbs Sicilian-style, and for this, see the recipe by clicking here
The second step is to complete its seasoning for the burgers by adding EVO oil and water.
Now we will take care of the fish, which must be very fresh.
Remove the skin and cut it first into chunks and then
Place it in the food processor bowl and chop it. If you have a Bimby, you can chop it 3 times at turbo speed for 2 seconds.
Now wash the zucchini, remove their tips, and grate them.
Combine the fish mince, eggs, zucchini, and breadcrumbs together and knead until you get a homogeneous mixture.
Place parchment paper on the baking sheet, and with the help of a moistened pastry ring and a spoon, form the burgers by placing the right amount of mixture inside and leveling it with the back of the spoon.
When you have finished all the mixture, turn the oven on to 350°F static
Bake for about 7 minutes per side.
Serve hot with a side dish of your choice.
