- 1 lemon (juice and zest)
- as needed sage
- as needed pepper
- as needed salt
- 1 sprig lemon thyme
- 2.5 cups water

Preparation: Swordfish with Butter and Lemon for Thermomix
The first thing to do is to ensure we use fresh fish, or alternatively freshly frozen fish.
Using a grater with wide holes, grate the surface of a rather large organic lemon, and use the juicer to extract its juice. Set both aside.
Place butter, 3 tablespoons of water, a pinch of salt and one of pepper, 2 sage leaves, and half of the lemon zest in the bowl. Heat for 2 min. at 212°F speed 1.
Set aside in a bowl.
Without washing the bowl, pour in 2.5 cups of water. Spread the slices in the Varoma and tray, season the slices with salt, pepper, and lemon thyme, and close the lid.
Place the Varoma on the bowl and cook for 30 min. at Varoma speed 1.
At the end of cooking, place the fish on a platter and pour the butter sauce and lemon juice on top.
