Starting a good recipe begins with choosing the freshest fish
Buy slices that we will then cut into pieces about 0.6 inches.
Slice the zucchini with a mandolin, be careful with your hands.
Cut each cherry tomato into three slices.
Finish preparing the ingredients by seasoning the Sicilian-style breadcrumbs, with 1 finely chopped garlic clove and parsley, grated Pecorino Romano, salt, and pepper to taste.
In a plate, beat 1 egg
and dip the swordfish pieces in it, then drain them with a skimmer before…
coating them in breadcrumbs.
Once done, set them aside.
Do the same with the zucchini, first in the egg and then…
in breadcrumbs.
Now that all the ingredients are breaded, let’s form skewers, alternating fish, cherry tomatoes, while the zucchini wraps them like a ribbon.
Place them in a baking tray with a sheet of parchment paper underneath.
Bake in a preheated oven at 374°F (190°C) for 10 minutes, then turn them and bake for another 3 minutes.
For air fryer cooking, after preheating at 356°F (180°C), cook them for 10 minutes, turning halfway.
For pan cooking, fry them in abundant seed oil until golden.
