  • 3 1/4 cups flour (any kind you prefer, even low glycemic index.)
  • 2 eggs
  • 1 egg white
  • 1/2 cup sugar (or 90 g of erythritol)
  • 7 tbsps butter
  • 1/2 cup milk
  • 1 oz fresh yeast
  • 3/4 cup dark chocolate chips
  • 2 tsps salt
  • as needed milk

Steps

To prepare

  • Preparation by hand or with a stand mixer.

    First, prepare the dough by dissolving the yeast in a little warm milk and set aside. In a bowl or your stand mixer, add the flour, butter, finally the salt, and erythritol, and mix.

     

  • Add the dissolved yeast in the milk and start working the dough. Then add the rest of the warm milk, eggs, and egg white, and continue working.

  • Put the yeast and milk in the mixing bowl and mix for 3 minutes at 98.6°F (37°C) speed 2.
     
    Then add all the other ingredients except the butter, and knead: 5 min./knead.
    Now add the softened butter and chocolate chips and knead again: 4 min./knead.

  • Form a ball and let it rise for at least 4 hours covered with a cloth. After this time, take the dough and divide it into 7 parts. Make folds to form 7 balls, and place them in a 10-inch ring-shaped mold previously buttered and floured and let it rise for an hour in the turned-off oven.

  • After this time, brush the surface of the brioche ring with chocolate chips with some milk and bake it in a preheated oven at 356°F (180°C) for 20 minutes.
