I’ve put my own spin on it and today I present it to you in a light version.

- 1.8 oz Parmigiano Reggiano DOP (shaved)
- 3.5 oz Iceberg lettuce
- 2.1 oz extra virgin olive oil
- 3 teaspoons mustard
- 2 tablespoons Greek yogurt
- to taste salt
- to taste pepper
- to taste roast spices
- 3.5 oz croutons
- 1 teaspoon orange blossom honey (Or 1 of erythritol)

Preparation of The Caesar Salad RitaAmordicucina Version.
Start with the good choice of bread suitable for making croutons, like this Whole Wheat Semolina, see the recipe .
Heat the grill and, in the meantime, cut it into cubes that you will then toast on all sides.
Wash the iceberg lettuce, and cut it into strips.
Then, using the peeler, make shavings of Parmesan.
Now my secret: we will prepare a RitaAmordicucina dressing.
In a small bowl, mix the mustard, Greek yogurt, honey, half of the oil, and a pinch of roast spices. Whisk with a fork and set aside.
Now take the chicken breast, if it’s whole, slice it.
Dust the slices with a little roast spices and brush them with the remaining olive oil.
Heat the grill again and grill them for 3 minutes on each side, depending on their thickness.
Then cut them into strips.
Assemble the salad by placing the lettuce at the bottom of a bowl, then the chicken, Parmesan shavings, and croutons.
Drizzle the dressing here and there using a teaspoon,
