The Chicken Meatball Recipe
Traditional recipe in a pan or air fryer and also with Bimby.
A great novelty for pre-cooked chicken meatballs.
How many times have you had leftover chicken, maybe the driest part, that no one wants to eat?
For this reason, I have created this tasty recipe for our children, and why not for adults too.
Three different cooking methods: oven-baked, air-fried, and finally the classic frying, in a pan or deep-fried.
Besides serving as a main dish, these delicious meatballs are an excellent finger food, and they can be served at an aperitif or as an appetizer among mixed fried snacks.
You can also use raw chicken breast which we will cook before the recipe.

- 1 cup breadcrumbs
- 1 oz Parmigiano Reggiano DOP
- 1 clove garlic (optional)
- 1 bunch chopped parsley
- 2 eggs
- to taste salt
- to taste pepper
- to taste roast herbs
- 3/4 cup flour
- 2 eggs
- 1 cup breadcrumbs
- 1 tbsp curry
- to taste extra virgin olive oil

Preparation
Traditional Recipe
First, you need to decide if you’re using raw chicken breast or cooked. In the first case, you need to cook it first, in the microwave with some herbs, or simply roast or boil it
Let’s start with the pre-cooked chicken.
Place it in a food processor and chop it finely, as much as you can.
Transfer the meat into a bowl, where you will add the eggs, breadcrumbs, grated Parmesan, chopped parsley, and garlic,
a pinch of salt and a pinch of pepper, and roast herbs to taste.
Knead and form balls with a diameter of 1 1/8 inches.
Now, place the flour in one bowl, the beaten egg in another, and the other breadcrumbs flavored with salt and herbs to taste in the last one.
Dip the chicken meatballs first in the flour, then in the beaten egg, and finally in the breadcrumbs flavored with curry and herbs.
Now you just have to cook them, depending on your tastes or nutritional needs.
Either in the oven at 356°F for 20 minutes.
Or in a pan in plenty of extra virgin olive oil, or finally in the air fryer, at 356°F for a total of 20 minutes.
But after the first 10 minutes, you need to turn them over and continue
Here are the ready-made recycled chicken meatballs.
Let’s start with the pre-cooked chicken, put it in the bowl and chop for 20 sec speed 10.
Then add the 2 eggs, breadcrumbs, Parmesan, parsley, and chopped garlic, half a teaspoon of salt, and a pinch of pepper and herbs.
Mix for 2 minutes at speed 5.
Transfer the mixture into a bowl, knead and form balls with a diameter of 1 1/8 inches.
Now, place the flour in one bowl, the beaten egg in another, and the other breadcrumbs flavored with salt and herbs to taste in the last one.
Dip the chicken meatballs first in the flour, then in the beaten egg, and finally in the breadcrumbs flavored with curry and herbs.
Now you just have to cook them: in the oven at 356°F for 20 minutes.
Or in a pan in plenty of extra virgin olive oil, or finally in the air fryer, at 392°F for 11 minutes, turn them over and then for another 10 minutes.

The chicken meatball recipe can be stored either raw or cooked in the fridge for up to 2 days and in the freezer for up to 3 months.
Tips: if you want to make them tastier, you can put inside cubes of provolone, ham, or smoked bacon.
