From today, with simple steps, you can easily and genuinely prepare it at home with few sugars.

  • 2.1 oz dried dates (or dried apricots)
  • 1 cup apple (weighed without peel)
  • 0.2 cups water
  • 2.8 tbsp seed oil (or coconut oil)
  • 1 tbsp ground cinnamon
  • 4 cups rolled oats
  • 1 cup walnuts (or hazelnuts or almonds or all mixed)
  • 1 cup almonds
  • 0.2 cups pumpkin seeds

  • Blender / Mixer – my Bimby
  • Bowl
  • Parchment paper
  • Baking tray
  • Oven
  • Spatula

Preparation

To make

  • Remove the pit from the dates or dried apricots and place them in the bowl of your mixer.

    Add also the peeled and chopped apple, water, oil and blend everything.

  • A creamy mixture will form which will serve as a binder for the Granola.

    If using the Bimby, 2 min. speed 10

  • In a bowl, pour the rolled oats and coarsely chopped dried fruit.

    Also add the ground cinnamon and mix.

  • Now add the date cream and mix everything, blending uniformly.

    Take a baking tray lined with parchment paper, spread the Granola evenly over the entire surface of the tray, pressing it down well with a spatula, as if you were making nougat,

  • Turn on the oven to 356°F fan, and bake the Granola for 25 minutes, and as soon as it turns brown, turn off the oven and let it cool.

    Now it’s my absolute favorite moment: “crunching it”, breaking it into pieces.

  • Prepare a jar with an airtight seal, and store it for about 1 week.

The crunchy light Granola by Rita Amordicucina can be stored in an airtight jar for up to 1 week.

If the quantity you prepare is excessive, I recommend dividing it into portions and freezing it.
