The mixed fruit compote, sugar-free, traditional and Bimby recipe

This goodness was born as a recycling recipe, easy to make, and economical.

How many times have you had ripe fruit that no one wants, like bananas with spots or overly soft pears, etc.? Here’s the solution!

The mixed fruit compote is an excellent food that accompanies us in all breakfasts, snacks, and dessert preparations like croissants and tarts.

You can use all types of fruit, which must be strictly organic.

We will make a load of vitamins that will help us fight winter illnesses, and it’s also a different way to have these fruits at hand even when they’re out of season.

You need at least 3 types or more of fruit plus lemon or orange juice.

I will describe various types but if you have only 3, that’s okay too.

If we are in winter or autumn, we will find apples, pears, citrus, etc. In other seasons we will have more variety.

Whatever assortment you want to make, it’s important to use 1 kg of fruit.

  • 3.38 fl oz lemon juice
  • 1 kiwi
  • 1 package pectin
  • 1.76 oz stevia (Or 5.29 oz erythritol, if you like it otherwise none)

What we need to make the

  • 1 Knife
  • 4 Jars glass with screw cap
  • 1 Pot or Bimby
  • 1 Immersion blender or Bimby

Steps

Sanitizing the jars during preparation:

  • Arrange the jars and lids in a large pot, completely covering them with water. Bring to a boil over medium heat and let boil for 30 minutes.

  • At the end, turn off the heat and keep them warm by closing the pot with the lid. Carefully remove the jars and lids with the help of tongs and dry them completely with a clean cotton cloth.

  • Wash the fruit well, peel it and remove the stalk and seeds, then cut it into pieces. Squeeze the lemon juice

  • Transfer the fruit to a pot and blend the mixture with an immersion blender.

    Add the package of pectin, sweetener, and lemon juice, and put on low heat.

  • If you do not want to use pectin, you can add 10.58 oz of apples, which contain pectin. (to be added in addition to the weight of the fruit).

    Stir often and from the moment it boils, cook for about 25 minutes.

  • Place the chopped fruit in the jug with the 3:1 pectin, sweetener, and lemon juice

    close with the measuring cap and blend on turbo 2 seconds for 2 times, if you prefer a creamier compote you can blend more

  • Stir with the spatula, place the basket on the lid and cook 25 min at 212°F reverse speed 1.

    Then another 5 min at Varoma temperature, place the basket on the lid speed 1

  • When the compote is cooked, transfer it to the previously sterilized jars, close the lids and turn them upside down to create a vacuum.

Storage variations and advice

Storage:
label the jars with the name and date of preparation before storing them in the pantry.
The compote keeps for several months in a place away from light, cool and dry.
Warnings:
before using it, check that the lid still has the central part lowered; otherwise, it is advised not to consume the preparation;
Once the jar is opened, consume the content within 15-20 days and store it closed in the refrigerator.

Variations: to give a different flavor to the compote you can add a pinch of cinnamon or ground cloves along with the fruit.
