- 1/4 cup brown sugar (or erythritol)
- 1.5 tbsp water
- 1.75 oz butter
- 3.5 tbsp apple cider vinegar
- to taste thyme
- to taste salt

The first thing to do is to peel the borettane onions. They have a thin skin that will come off easily. Leave them whole.
In a pan, put the water, sugar, and butter. If you have issues with sugar, you can use erythritol.
Bring to a boil to melt the butter and sugar.Then add the peeled and cleaned borettane onions and season with salt and pepper.
Cook everything for a few minutes and then add the apple cider vinegar.
Cover and continue cooking, on very low heat, for about forty minutes. The sweet and sour onions need to be cooked on very low heat and for a long time, this way they will become flavorful and cook evenly both outside and inside.
At the end of cooking, add 20 grams (0.7 oz) of butter in cubes and stir.
This will create a truly irresistible sauce!

You can store the sweet and sour onions in the fridge for a couple of days, well closed in a jar or airtight container, and heat them in a pan or microwave just before enjoying them. They can be served either hot or at room temperature and will be delicious in both cases.
A tip for you: PRESERVATION
If you want to store them longer besides in the freezer, you can put them in already sterilized jars, and in turn, you need to boil them for at least 30 minutes, and then turn the jars upside down to create a vacuum seal. Then store them in the pantry for up to 1 year, but once the jar is open, it should be kept in the fridge and consumed within 3 days.
