  • 4 donuts (Zero Cloud)
  • 4 tablespoons pistachio flour
  • 4 tablespoons hazelnut spread (sugar-free see recipe click)
  • 1 oz hazelnuts
  • 12 g erythritol
  • 1 teaspoon unsweetened cocoa powder (heaping)
  • 0.4 oz sunflower oil
  • 2 oz dark chocolate
  • 1 pinch vanillin

  • 1 Knife
  • 1 Blender
  • 1 Pot

Steps

The first preparation concerns

  • If the hazelnuts you bought are not toasted, preheat the oven to 320°F and line a baking sheet with parchment paper, distribute the hazelnuts on the prepared tray, and toast in the hot oven for 10 minutes (320°F).
    If instead you bought them already toasted you can skip this step

  • Put the hazelnuts together with the erythritol, unsweetened cocoa, and vanilla extract in your blender jug, pour the sunflower oil and start blending.
    With the blender, I recommend doing it little by little to prevent the appliance from overheating.
    Continue until you get a pasty mixture. Set aside, in a bowl.

  • Break the chocolate into pieces and put it in a microwave-safe bowl and melt it.
    If you don’t have a microwave you can melt it in a bain-marie on low heat, be careful, it must not reach boiling.

  • Now take back the first bowl with the hazelnuts and cocoa and add the melted chocolate.
    Mix with a wooden spoon or spatula until you get a smooth cream and
    Transfer the bowl into another pot with water to cook in a bain-marie for 5 minutes to melt the erythritol well.

  • Once the sugar-free hazelnut spread is ready,
    pour it into jars, let it cool, close, and store in the pantry, or fridge.

  • Cut the Zero Cloud Donut in half.

  • Now sprinkle with pistachio flour, or other grains to your taste.
