- 14 oz potatoes (or celeriac or sweet potato)
- 10.5 oz carrots (or pumpkin)
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 tsp sugar (or erythritol or honey)

To prepare
To prepare the toasted octopus with sweet and sour vegetables, the first thing to do is clean the octopus, which is very easy, just empty everything inside the head, remove the eyes and beak located right under the tentacles
Take a pot of water and bring it to a boil, as soon as it boils take the octopus by the head and dip it in the water up and down at least 3 times until the tentacles curl up properly. Then follow the instructions below for octopus cooking times and type, click here.
Once cooked, cut off the head and tentacles one by one and dry them with paper towels and set them aside.
Now for the vegetables: peel the potatoes and carrots
or depending on your tastes if you are taking pumpkin and celeriac,
dice them and boil in water with a bit of salt, or in the microwave for about 5 minutes.
Now that everything is boiled, dry the ingredients with a paper towel, take a non-stick pan and pour in a bit of olive oil.
Heat well and toast the tentacles and vegetables from all sides until they are colored.
If they don’t all fit in the same pan, do this in batches until all ingredients are finished.
Once everything is toasted, recombine them in the pan.
Deglaze with 1 tablespoon of apple cider vinegar and 1 teaspoon of sugar or erythritol, mix well and let it all evaporate.
