  • 6.35 oz radicchio (Maserà)
  • 1 tablespoon honey (or erythritol)
  • 2 tablespoons balsamic vinegar (or apple cider vinegar)

  • Let’s start by removing the outer skin from the tuna slices.

  • Add a drizzle of extra virgin olive oil in a non-stick pan over high heat, and let it heat up well.

  • Sear the fish slices for a minute on each side.

  • Leaving them still red in the middle.

  • Place them on a serving platter and season them with a grind of pepper and salt.

  • Add a little bit of extra virgin olive oil,

  • and add the thinly sliced onions, and let them stew for 4/5 minutes.

  • Meanwhile, to get ahead, slice the radicchio into strips.

  • After 4 minutes, drizzle the onion with balsamic vinegar, and let it evaporate.

    Usually, apple cider vinegar is used for radicchio, but I wanted to use balsamic because it pairs well with tuna.

  • When the vinegar has evaporated, it’s time to add the honey, stirring, until it dissolves well.

  • It’s time to cook the radicchio, sprinkle a little salt on top, stir, and …

  • Cook covered for 6 minutes, stirring or tossing occasionally. I recommend not adding water; it should cook with its own moisture.

    If you see that it has dried out, lower the heat.

  • At the end of radicchio cooking, place it on the fish slices, and serve.

  • Let’s start by removing the outer skin from the tuna slices, place the slices on the Varoma tray and cover.

  • Place the Varoma container on the mixing bowl lid, lay the radicchio inside it, and sprinkle with salt.

    Place the tray with the tuna on top.

  • Close the Varoma with the lid and set aside.

    Put the onion in the mixing bowl, chop: 8 sec./speed. Gather on the bottom with the spatula.

  • Add extra virgin olive oil, sauté: 3 min./120°C/speed. 1.

    Add the honey, 100 g of water, and the vinegar, close the mixing bowl and position the Varoma, cook: 20 min./Varoma/speed. 1

  • Carefully remove the Varoma and arrange the cooked tuna and radicchio in a baking dish.

    Evenly distribute the dressing over the tuna and radicchio. Cover the baking dish with plastic wrap and place in the refrigerator
