These were the typical recipes of Sunday lunches when our grandmothers would enter the kitchen at dawn and leave by evening.
Yes, because the beautiful lunches of the past, enjoyed in the yard with children running happily around, lasted an entire day, accompanied by music, songs, and dances.
Such nostalgia….
Today, even on Sundays, we have little time to dedicate to cooking, but I wanted to create this menu to be made in about 1 hour when my grandmother would take all morning with handmade pasta.

  • 6 slices beef or veal, bottom round, wide cuts (cut extremely thin and very wide)
  • 3 eggs (hard-boiled)
  • 7 oz mortadella with pistachios (in one piece)
  • 1 cup breadcrumbs (seasoned Sicilian style, see recipe in the link)
  • Half Tropea red onion
  • 2 carrots
  • 2 tbsp extra virgin olive oil
  • salt
  • pepper
  • 4 cups tomato puree
  • 9 oz egg tagliatelle (6 green nests)
  • 5 oz mozzarella
  • as needed basil
  • 2 sprigs rosemary
  • 3 leaves bay leaves
  • 1 clove garlic

Preparation of the Typical Sicilian Sunday Lunch

Let’s prepare the meat rolls.

  • First, let’s make the hard-boiled eggs by boiling them for at least 15 minutes, then cool them down and shell them.

  • Prepare the Sicilian seasoned breadcrumbs by following the original recipe clicking here.

    add a bit of water and extra virgin olive oil to create some moisture.

    Set aside

  • Spread the meat slices on a work surface.

  • Add the ingredients: the mortadella cut like this,

  • 1 slice of hard-boiled egg for each slice,

  • the chopped mozzarella.

  • and 2 piles of seasoned breadcrumbs.

  • Roll them up carefully sealing the sides, then..

  • Tie with kitchen twine.

  • In a non-stick frying pan, pour extra virgin olive oil, bay leaves, rosemary, and the whole garlic clove with the skin.

  • Brown on all sides until they change color.

    Then remove from heat and set aside.

  • In the same pan without washing it, add more oil and finely chop the onion and carrots, and sauté for 2 minutes while stirring.

  • Add the tomato puree, and..

  • about 1.25 cups of water, rinsing the same bottle of puree.

  • Adjust the salt, and..

  • Add the prepared meat rolls into the sauce,

  • Cover with a splatter guard, and let it cook, meanwhile proceed with the rest of the recipe.

  • In a baking dish, arrange the raw nests.

  • and fill them with the rest of the meat rolls’ ingredients.

    Then make cubes of mortadella,

  • of hard-boiled eggs,

  • and mozzarella.

  • Meanwhile, about 10 minutes would have passed since the meat rolls’ sauce has been cooking, take what you need to cover the nests, and meanwhile, lower the heat to the pan to complete the cooking.

  • Cover the baking dish first with parchment paper, and then..

  • With foil, seal the sides well.

  • Bake for 20 minutes. Then let rest for 5 minutes outside the oven still covered with the papers, and meanwhile, you can turn off the meat rolls and untie the twine.
