Preparation When an Omelette Becomes Art

  • Wash the vegetables, remove their stems and the shallot skin

  • Cut the zucchini into cubes

  • Cut the bell peppers into squares

  • Cut the cherry tomatoes in half.

  • Chop the parsley, garlic, shallot, and chives.

  • Preheat the oven to 350°F. In a bowl, combine the bell peppers, zucchini, grated pecorino romano, and the chopped herbs.

  • Crack 4 eggs, and add some salt and pepper to taste.

    Mix everything well.

  • Transfer the mixture to a round baking pan lined with parchment paper. Decorate with the cherry tomatoes.

    Then bake in the preheated oven at 350°F for 20 minutes. The time depends not only on the oven but also on the size of the pan you use, so I recommend inserting a toothpick in the center; if it comes out dry, the omelette is ready.

  • Once it has cooled down a little, gently remove the parchment paper, and place it on a serving plate.
