Whole Roasted Hamburg Chick with Potatoes
Delicious, flavorful, and attractive with its golden crust — it makes a great presentation on our tables and will please both adults and children.
In my meat roasts I usually use butter and my blend of herbs to make them tasty and crispy, (see recipe).
This roasted chick was a success for its crisp exterior and tender meat inside.
I used a small chick of about 1.5 lb.
To make it even more indulgent, I added small Silan potatoes.
Needless to say, it was delicious.

Ingredients

- 1.5 lb chicken (small whole)
- 2 sprigs rosemary
- 3.5 tbsp butter
- to taste salt
- 1 tsp pepper
- to taste roasting herbs
- 1 clove garlic
- to taste thyme
- 14 oz new potatoes

What we need to make the
- Baking dish (rectangular baking dish 11.8 x 13.4 in)
- Cutting board
- Knife
- parchment paper
- Aluminum foil
- Kitchen twine
- Thermometer recommended
Preparation
First of all, preheat the oven to 356°F fan or 392°F conventional.
Now prepare the butter mixture:
In a bowl combine softened butter, chopped rosemary, chopped garlic and the roast herbs, this is how I make them, click here.
Prepare the chicken: Rub the herbed butter under the skin and all over the chicken, especially on the breast and thighs.
Then season generously with salt and freshly ground black pepper, and stuff the cavity with 1 sprig of rosemary.

For the best results, tie the legs with kitchen twine. Place the chicken in a large roasting pan — preferably a ceramic baking dish, which distributes heat better for long roasts — and add the potatoes cut in half.
Place in the oven on the middle rack and roast uncovered for 45–50 minutes.
Every 15 minutes baste it so a really appetizing crust forms.
Also, if necessary, rotate the pan from time to time; this is especially useful if your oven does not cook evenly.
If you notice it is browning too quickly, cover it with a sheet of parchment paper topped by a sheet of aluminum foil. (Never put aluminum foil in direct contact with food.)
At the end of cooking, leave it covered with the parchment paper and let it rest for about 5 minutes before carving.
