  • 2 eggs
  • 1 cup breadcrumbs (seasoned Sicilian style, see my recipe)
  • 1.8 oz provolone cheese
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil
  • 5.3 oz zucchini (thinly sliced)

To do

  • We need to start with the zucchini:

    Wash and trim the zucchini, then use a large-hole grater to grate them, and squeeze them with a tea towel.

  • Add the eggs and Sicilian seasoned breadcrumbs to the mixture, and knead.

  • Line a baking sheet with parchment paper, and with the help of a pastry ring, form the burgers by pressing well with the back of a spoon.
