You can bake or air fry the zucchini and red pepper burgers, and serve them hot or at room temperature, so you can prepare them in advance and serve them at the right moment.

- 10.5 oz zucchini (grated and squeezed)
- 3.5 oz red peppers (or carrots or mushrooms)
- 2 eggs
- 1 cup breadcrumbs (seasoned Sicilian style, see my recipe)
- 1.8 oz provolone cheese
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- 5.3 oz zucchini (thinly sliced)

Steps
To do
We need to start with the zucchini:
Wash and trim the zucchini, then use a large-hole grater to grate them, and squeeze them with a tea towel.
Also slice the red peppers
combine them in a glass bowl and mix them together.
Add the eggs and Sicilian seasoned breadcrumbs to the mixture, and knead.
Line a baking sheet with parchment paper, and with the help of a pastry ring, form the burgers by pressing well with the back of a spoon.
Once completed, let’s move on to the finish
Place the provolone cheese cubes on each
and then thin slices of zucchini. Sprinkle a pinch of salt and pepper on top of each, a drizzle of extra virgin olive oil, and bake in a preheated oven at 356°F convection for 15 minutes. Or in an air fryer at 392°F for 10 minutes.
