Preparation of Zucchini Carpaccio Side Dish
This side dish is very easy to make. Wash the zucchinis and remove the ends.
Then, using a mandolin slicer, make very thin slices about 1mm thick.
Gather all the slices in a container, and add:
Lemon juice, oregano, mint, lemon thyme, salt, pepper, and olive oil.
Mix, close the container, and transfer it to the refrigerator for at least 3 hours.
After the time has passed, drain the zucchinis from their marinade, distribute them on plates with a little more of the herbs used for marinating.
