  • 1/4 cup 0% fat Greek yogurt
  • 1/3 cup Pecorino Romano (grated)
  • Half clove garlic
  • 1 pinch salt

Preparation of Zucchini Pesto Light Version

  • The first thing to do is to put the jug in the fridge even 4 hours before or more.

    You should do this even if you’re not using the Bimby, so we’ll avoid chlorophyll oxidation.

  • When the jug is well chilled, start washing the basil, mint, and zucchini, remove all the hard stems from the basil and let it drain, remove the ends of the zucchini, then cut it into pieces.

  • Peel the garlic, and add the basil, garlic, and salt to the jug.

  • Add the zucchini, oil, Pecorino Romano, and finally the yogurt.
