- 1.1 lbs pumpkin (raw)
- salt (to taste)
- pepper (to taste)
- spices to taste (to taste)
- extra virgin olive oil (to taste)
- breadcrumbs (to taste)
- vinegar (to taste)
- 4 slices whole wheat sandwich bread (or white)

Let’s prepare this delicious crunchy pumpkin together
Remove the skin from the pumpkin and then grate it with a grater with large holes, squeeze it well and place it in a bowl. At this point, you need to season the raw pumpkin as if it were a salad, and you can add all the ingredients and flavors you want in addition to the ones I used. Mix well and pour everything into a baking dish covered with parchment paper, leveling the pumpkin well. Now prepare the crumble. Toast the slices of bread, I used whole wheat bread hence why it’s dark, but white bread is also fine, once toasted, crumble it coarsely – remember it shouldn’t be fine – cover the pumpkin with the breadcrumbs and bake at 350°F for about 15-20 minutes or you can cook as I did in the air fryer for 20 minutes at 400°F. Remove from oven, you can add sage leaves if you like and enjoy your delicious pumpkin.
