  • 3 eggs
  • 2 3/4 cups all-purpose flour
  • 1 apple
  • 1 orange
  • 3/4 cup granulated sugar
  • 2/3 cup sunflower oil
  • baking powder (1 sachet (about 4 tsp))
  • powdered sugar (for dusting)
  • pearl sugar

How to prepare the super soft plumcake with blended apple and orange

  • THE STEP THAT GIVES THE CAKE AN INTENSE AROMA: Blend the orange with the apple in the blender, using the whole orange including the peel. Beat the whole eggs very well with the sugar until they are foamy, add the oil, then the blended fruit and finally the sifted flour with the baking powder. Pour everything into a buttered and floured loaf pan or one lined with parchment paper, sprinkle with pearl sugar and bake at 356°F for about 40 minutes, but adjust for your oven and do the toothpick test. Once baked, dust with powdered sugar. It’s even better the next day.

A small tip

If you add some chopped almond crunch (pearled almonds), you’ll get an absolutely fantastic crunchy note
