You might wonder why old-fashioned, because in our grandmothers’ time, there were no mixers or electric beaters, and so desserts were vigorously mixed by hand and often had a rustic appearance but were soft and delicious like this very plumcake. You just need to mix the ingredients together, add some apples, and the dessert is ready to be baked and enjoyed. - 3.5 oz Greek yogurt
- 5.5 oz sheep ricotta
- 3 apples
- 2 eggs
- 2.1 oz sugar
- 3.5 oz all-purpose flour
- 3.2 oz whole wheat flour
- 3.5 oz walnuts (shelled and coarsely chopped)
- 1 packet baking powder
- 2 tablespoons raisins
- lemon zest (grated)
- ground cinnamon (to taste)
- powdered sugar (for dusting)

LET’S MAKE THE PLUMCAKE TOGETHER
As I mentioned above, this is a very simple and quick dessert to make without electric beaters. First, soak the raisins and let them soften, then peel the apples (I only peeled two and used one with the peel) and cut them into slices about 1/2 inch thick (see the photo below), put them in a baking dish with a tablespoon of sugar, a bit of cinnamon, a splash of lemon juice and let them soften either in the microwave, as I did in the air fryer or simply on the stove, but they shouldn’t cook, just soften. Once softened, let them cool. Meanwhile, put all the ingredients in a bowl except for the flours and baking powder. Mix well with a hand whisk, sift the flours and add them to the bowl, and finally add the baking powder. Mix well and then pour everything into the greased and floured plumcake mold, or as I did, lined with parchment paper. Level well and then press all the apple slices on top, gently pressing the dough with your hands; this way, the apples will sink a bit (see the photo below). Bake in a preheated oven at 356°F for about 35/40 minutes, but always adjust with your oven and do the toothpick test before removing it from the oven. Remove the cake and sprinkle with powdered sugar
