- 10.6 oz carrots
- 9.9 oz chickpea flour
- 0.85 cup water
- Half onion
- salt
- extra virgin olive oil
- seeds (for salad)
- spices (to taste)

LET’S PREPARE THE PUFF PASTRIES
Blend the carrots with the onion, then gradually add the flour and water. Finally, adjust the salt and add the spices you like best, plus a generous handful of seeds. Mix everything well and transfer the mixture onto a sheet of baking paper, cover it with another sheet of baking paper, and with the help of a rolling pin, press it well; it should be quite thin, otherwise, they won’t be crispy. Brush well with oil and sprinkle again with seeds; I also added a bit of pepper. Using a pizza cutter, cut the dough into strips and then into rectangles. Bake everything at 356°F for about 20 minutes at most, but adjust according to your oven, or cook in an air fryer at 392°F for 15 minutes. Remove them from the oven and let them cool
You can decide the thickness of the puff pastries; the thinner they are, the crispier they will be. You can also enjoy them with some spreadable cheese; they are a real delight. If you don’t like chickpeas, you can use regular flour.
